March Update

Spoonbill Neighbor activities continue to multiply even though some February events were postponed because of the Omicron surge.  As always, being fully vaccinated is a requirement to attend any Spoonbill event.  This is for the protection of all of us, especially older and immune-compromised members.

On February 2nd, Sue Whittle & Meri-Kathryn Peed took a walk in the Princess Place Preserve in Palm Coast. It is a 1,500 acre preserve with an 1886 preserved lodge, the first in ground swimming pool in Florida and 8 hiking trails of 15.8 miles. There is an abundance of wildlife to be seen along the trails including birds, dolphins, deer, and possibly feral pigs.

On February 11th, Dining -In Group “A (below) met, hosted by Patty Damon and Rich Bittlingmayer.  Joining in the fun evening were Donna and Frank Delzingaro, Valerie and Bill Crooks and Christine and Stan Penton. Freshly squeezed “bottomless” grapefruit martinis, one of many of Patty’s specialties welcomed the guests. The menus consisted of spinach and sausage stuffed mushroom appetizers from the Delzingaro’ served out on the lanai. Chef Rich was in his element grilling the most delicious chicken kabobs that were marinated in Patty’s secret recipe. Patty also prepared delicious pineapple with mixed vegetables and coconut rice. The Pentons brought the most amazing and yummy salad with a fabulous dressing and the Crook’s treated everyone to a homemade cheesecake with cherry or blueberry topping. We all laughed when Valerie admitted to everyone that she was not a baker as there was not a crumb left on anyone’s plates when we were finished! That cheesecake could rival any from New York! It was a fun time and everyone is looking forward to our next get together at the Delzingaro’s.

On February 16th the Garden Club (below) met at Lead of the Garden Club Helen Borisoff’ s home.  Kathy Sharpless, VP of the HOA joined the group and gave a very informative talk.  She spoke about the maintenance, invasive species and ecological issues affecting our community.  Regarding planting containers/pots, please feel free to reach out to Helen.

Also on February 16th, the Lunch’/Bunch Group (below) met at Otters on the Water. It was fun! The private room was beautiful, the food very good and the company the best!

On February 23rd, the Spoonbill Book Club members held their first meeting (below) at the home of Meri-Kathryn Peed. Under the wonderful direction of our facilitator, Dianna Christakos, there was a lively discussion about The Lincoln Highway, the month’s reading selection. Plans were made to meet every other month, from 3:00-5:00. Another great way to connect with neighbors.

On February 24th, the Malt & Cigar Group (below) met at Stan and Christine Penton’s home.  A terrific selection of quality bourbons was on the menu. The interesting conversation took the group late into the well-oiled night.

Also on February 24th, the Dining-In Group C (below) enjoyed a delicious dinner and delightful company at their first dinner at the home of Meri-Kathryn and John Peed.

On February 25th, the Happy Hour Group (below) met at Joanne Naglieri and Gerry Kurth’s home.  It was a beautiful night, the attendees enjoyed wonderful hors d’oeuvres, wine, and a specialty fruit punch.  The warm hospitality and camaraderie of neighbors made it a perfect way to spend an evening!
