Here’s a different way to prepare avocados, and it makes for a nice change instead of the same-old guacamole. It makes a pretty appetizer nestled on a bibb lettuce leaf with a lime wedge. And there’s bacon, so really, how bad can it be?
The Ingredients
3 ripe avocados
1 medium onion, finely chopped
6 slices bacon, finely chopped
2 oz. butter
1 tbsp. lime juice
Hot Sauce
Salt and Pepper to taste
The Artistry
Cut, pit and scoop out avocado flesh into a bowl. Reserve skins.
Saute onion in butter until soft and golden.
Add bacon and fry until bacon is cooked, but not crisp. Remove from heat and cool.
Mash avocado flesh and add lime juice. Season with hot sauce, and salt and pepper to taste. Add bacon/onion mixture and mix well.
Mound mixture into avocado shell halves and wrap in foil, but do not cover stuffing.
Bake at 400 degrees for 15 – 20 minutes. Garnish with lemon or lime wedges.
